Fluffy Homemade Muffins
Ingredients:

4 cups (480g) all-purpose flour

1.5 cup (300g) granulated sugar

4 tsp baking powder

1 tsp salt

4 eggs

4 tbsp (58g) unsalted butter, melted

1/2 cup (118ml) vegetable oil

1.5 tsp vanilla extract

1 cup (240ml) of milk of choice

Optional: 1/2-1 cup chocolate chips, blueberries, or diced fruit/strawberries, zest, nuts,
etc. Optional: Spices like nutmeg or cinnamon
Instructions:

Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it lightly. -
Mix the Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined. Set aside. -
Combine Wet Ingredients:
In another bowl, whisk together the melted butter, oil egg, vanilla extract, and milk until smooth. -
Combine Wet & Dry:
Pour the wet ingredients into the dry ingredients. Stir gently until just combined – be careful not to over mix. Over-mixing will make the muffins dense! -
Add the Fun Stuff:
If you’re adding any extras like chocolate chips, spices, or fruit fold them into the batter gently. -
Fill the Muffin Cups:
Using a spoon or ice cream scoop, fill each muffin cup about 2/3 full with batter. (This allows the muffins to rise beautifully.) -
Bake:
Place the muffin tin in the preheated oven and bake for 5-7 minutes at 400F or 200C and then turn the temperature down to 350F or 175C for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. -
Cool & Serve:
Let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
