Chocolate Caramel Cornflake Cake


Imagine layers of crunchy cornflakes, rich caramel, and silky smooth chocolate all coming together in one amazing cake. It's the perfect dessert for birthdays, celebrations, or even as a treat for yourself! So, if you're ready for a fun and scrumptious baking adventure, let's get started with this chocolate caramel cornflake cake recipe.




Ingredients:

Chocolate cake:
  • 2 tsp instant coffee 
  • 60g cocoa powder
  • 225g boiling water 
  • 195g oil (any neutral oil)
  • 225ml milk 
  • 3 large eggs 
  • 345g sugar 
  • 1 tsp baking soda 
  • 1 tsp salt 
  • 325g all purpose flour/plain flour 
Caramel Cornflakes:
  • 112g sugar 
  • 75ml cream
  • 37g butter 
  • 47g cornflakes
Milk Chocolate ganache:
  • 200g milk chocolate 
  • 100g butter 
  • 200ml cream

Instructions:

  1. Let's start with the chocolate cake. First add coffee, cocoa powder, and boiling water to a bowl and mix. Allow this mixture to cool. 
  2. Once cool, add in all of the other wet ingredients. Mix well, and now add in the sugar and salt. Mix until well incorporated. 
  3. Now add in your eggs, one at a time, to make sure they are mixed in well. 
  4. Time to fold in your dry ingredients. 
  5. Now line a cake tin with parchment paper or grease your baking tin with some oil. Bake the cake in the oven for about 30 minutes at 350F or 170C. 
  6. Once baked and toothpick comes out clean, allow to fully cool. \
  7. While the cake is baking in the oven we can start with our caramel. Heat the sugar in a pan at low/medium heat, until it has fully melted into an amber colour. While this is happening, try not to stir it too much. 
  8. Once melted, remove from the heat and VERY SLOWLY whisk in the cream. **Please be very careful here, if you pour the cream in too fast it will seize and your hands may burn from the intense heat. 
  9. Once all the cream is mixed in, then add in the butter and salt. Mix until it is all smooth and then put the caramel back on the heat again for about 2 minutes at low/medium setting. 
  10. Pour the caramel over top of the cornflakes and stir to completely coat them. 
  11. Flatten out the cornflake caramel onto a tray and allow it to cool completely. 
  12. Once the cake is completely cool you can make the chocolate ganache. 
  13. Melt the chocolate and butter together in a bowl in the microwave. Once fully melted, mix it until glossy and then add in the cream. Mix again until fully incorporated and glossy. 
  14. Put this ganache in the fridge to cool for about 30 minutes. 
  15. Once this mixture is cooled, we will mix this with a whisk at high speed for about 1 minute until light and fluffy. 
  16. Now all you have to do is assemble! 
  17. For assembly, take the cake layer down first and then add some ganache to the centre of the cake before layering on the caramel cornflakes. 
  18. Then add on another cake layer and then ganache. 
  19. Now it is time to let your creativity flow! Decorate the cake however you would like. 


This cake is not a quick bake and is a little more time consuming, but the results are fantastic! Definitely something to try for a special occasion or a birthday party!
