There’s something magical about homemade pizza—crispy crust, gooey cheese, and all your favourite toppings. But did you know the secret to the perfect pizza starts with the dough? Making pizza dough from scratch is incredibly satisfying and surprisingly simple. Once you make your own, you'll never look at store-bought dough the same way again. Here’s my foolproof recipe for making fresh, delicious pizza dough at home!



Ingredients:

  • 2 tbsp of active dry yeast

  • 3 cups lukewarm water

  • 2 tsp sugar

  • 6 cups all-purpose flour/plain flour (plus more for dusting)

  • 2 tbsp olive oil (extra virgin)

  • 2 tsp salt

Optional:

  • 1 tsp black pepper

  • 1 tsp rosemary 

  • 1tbsp chilli flakes 

  • 1tsp garlic powder 

Instructions:

Step 1: Activate the Yeast

In a small bowl, mix the warm water, yeast, and sugar. Stir until the yeast dissolves and let it sit for about 5-10 minutes until the mixture becomes frothy. This means the yeast is active and ready to work its magic.

Step 2: Combine the Ingredients

In a large mixing bowl, combine the flour and salt (plus other spices if you choose). Create a well in the center, and pour in the activated yeast mixture and olive oil. Use a spoon or your hands to slowly mix the ingredients together until a sticky dough begins to form. Or if you have a standmixer, mix on low-medium speed with a dough hook. 

Step 3: Knead the Dough

Transfer the dough onto a floured surface. Knead the dough for about 8-10 minutes, until it’s smooth and elastic. If the dough is too sticky, add a little more flour, but try not to add too much. You want the dough to be soft and just a little tacky.

If you have a standmixer, continue to mix on low-medium speed with dough hook until it all comes together. You may need to add some more flour if the dough is too sticky. 

Step 4: Let It Rise

Form the dough into a ball and place it in a lightly oiled bowl. Cover the bowl with a clean kitchen towel or plastic wrap. Let the dough rise in a warm place (countertop works fine) for about 2 hours, or until it doubles in size. Don’t rush this step—the longer it rises, the better the texture and flavour!

Step 5: Punch Down and Shape the Dough

Once the dough has risen, punch it down to release the air. Turn it out onto a floured surface and divide it into 3-4 portions (depending on the size of your pizza pans). Roll each portion into a ball, then let them rest for 10-15 minutes before shaping. This will make the dough easier to stretch.

Step 6: Stretch the Dough

Now comes the fun part! Using your hands or a rolling pin, stretch each dough ball into a round pizza shape. You can make it as thick or thin as you prefer. If you're using a rolling pin, be sure to sprinkle a little flour on your work surface to avoid sticking.

Step 7: Add Your Favourite Toppings

Once your dough is shaped, it’s time to top it with your favourite ingredients. Whether you’re a fan of classic Margherita, a veggie overload, or a meat lover’s pizza, the options are endless.

Step 8: Bake to Perfection

Preheat your oven to 475°F (245°C), or as hot as your oven can go, the hotter the better! Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

Tips for the Best Pizza Dough:

  • Use room temperature water to activate the yeast, not too hot or too cold.

  • Let the dough rise slowly: If you have time, let the dough rise for longer, if you need to you can leave it in the fridge overnight. This will enhance the flavour and texture of your crust.

  • Don't overwork the dough: Over-kneading can lead to a tough dough. Keep it gentle and give it time to relax.

  • Experiment with flour: While all-purpose flour (plain flour) is great, you can use bread flour for a chewier texture or even a combination of flours to experiment with the flavour.
