Best Banana Bread

There’s something incredibly comforting about the smell of banana bread baking in the oven. It’s the kind of recipe you turn to when you’ve got a couple of ripe bananas hanging around—and once you’ve made it, you’ll be looking for an excuse to let your bananas go spotty just so you can bake it again.

This banana bread is soft, moist, and perfectly sweet. It’s great on its own, but you can also dress it up with chocolate chips, walnuts, or a swipe of butter while it’s still warm.



Ingredients:

  • 1/4 cup softened butter 
  • 1/4 cup yogurt 
  • 1/2 cup brown sugar 
  • 3 ripe bananas 
  • 1 egg 
  • 1.5 cups flour 
  • 5ml baking soda
  • 5ml salt 
Optional:
  • Chocolate chips - measure with your heart 
  • Nuts - measure with your heart 
  • 1/2 tsp cinnamon


Instructions: 

  1. Preheat your oven to 350°F / 175°C. Grease and line a loaf tin.

  2. Cream together the softened butter and brown sugar. Once combined add in the yogurt. 

  3. Mix in the egg, and bananas until well combined.

  4. Add in the dry ingredients; flour, baking soda, and salt. Mix until no flour streak remains. 

  5. Add in the extras if using - chocolate chips, nuts, cinnamon. 

  6. Pour the batter into your prepared loaf tin. 

  7. Bake for 50–60 minutes, or until a toothpick inserted in the centre comes out clean.

  8. Let it cool in the pan for 10 minutes, then transfer to a wire rack.


Tips:

  • The riper the banana, the better. Black bananas = the best flavour.
  • You can reduce the sugar slightly if your bananas are extra sweet
  • It uses basic ingredients you probably already have at home.
  • It freezes well (if it even lasts that long).
