Eggless Marble Cake Loaf - A Swirl of Chocolate & Vanilla Delight

There’s something undeniably nostalgic and comforting about a good marble cake. The beautiful swirls of chocolate and vanilla, the moist and tender crumb, and the heavenly aroma that fills the kitchen—it’s pure joy in cake form. Today, I'm sharing a simple and delicious Eggless Marble Cake recipe that's perfect for any occasion (or no occasion at all!).

Whether you’re baking for someone with an egg allergy, following a vegetarian diet, or simply ran out of eggs, this recipe is here to save the day.

Why You’ll Love This Recipe

  • No eggs, no fuss – just basic pantry ingredients.

  • Beautiful marbled effect that looks impressive but is super easy to achieve.

  • Soft, moist texture with the perfect balance of vanilla and chocolate flavours.

Ingredients:

  • 200g Yogurt
  • 120g Powdered Sugar
  • 120g All-purpose flour/Plain flour
  • 10g Cocoa powder
  • 40ml Oil
  • 3g Baking powder
  • 3g Baking soda
  • 5ml Vanilla

Instructions:

  1. Preheat your oven to 320°F (160°C).
  2. Grease and line your loaf pan.
  3. In a large bowl, combine the yogurt with the baking soda until foamy.
  4. Then mix in the powdered sugar.
  5. Fold in the flour and baking powder along with the oil.
  6. Once that is nice and combined and has minimal lumps, separate the batter into two, and add cocoa powder to half the batter and vanilla to the other half. Do not overmix! If you think the batter is a little bit too thick, you can go ahead and add 1- 2 tbsp of milk if needed to loosen it up.
  7. Pour spoonfuls of vanilla and chocolate batter alternately into the prepared pan.
  8. Use a skewer or butter knife to gently swirl the batters together to create the marble effect.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Tips and Tricks:
  • If you do not have yogurt, you can also use sour cream or swap half the yogurt for milk.
  • Drizzle the load with a quick chocolate glaze for extra indulgence.
  • You can use granulated sugar or brown sugar if powdered sugar is not available. Brown sugar will add a hint of caramel taste to this loaf.

Whether you're a beginner baker or a seasoned pro, this eggless marble cake is a must-try. It’s simple, stunning, and incredibly satisfying. Happy baking!
