Oatmeal Tahini Cookies
These cookies are so simple and so delicious. I think they are a personal favourite. They are gluten-free, egg-free, refined sugar-free, and vegan. This recipe comes together in 1 bowl, has easy clean up, and only takes 10 minutes in the oven. It's the perfect healthy sweet treat!

Ingredients:
1/2 cup tahini
1 cup oats
1/3 cup maple syrup or honey
3 tbsp almond flour
1 tsp vanilla extract
1/2 tsp cinnamon powder
1/2 tsp salt
1/4 cup chocolate chips (or as many as your heart desires)
Optional ingredient:
2-3 chopped dates
Instructions:
Preheat oven to 175C or 350F
In a large bowl, add your wet ingredients - tahini, sweetener of choice (maple syrup/honey), and vanilla extract. Mix these together
Now add in your dry ingredients - oats, almond flour, cinnamon powder, and salt. Stir until it all comes together.
Now add in your mix-ins. The chocolate chips and chopped dates.
Using a spoon, scoop out batter onto a baking sheet or greased pan. Bake for 10-12 minutes. You do not want to over bake these cookies. Just bake until the edges are slightly golden brown. They are nice and chewy once they cool.
Enjoy the cookies with a nice glass of milk or on their own!
