Oatmeal Tahini Cookies

 Oatmeal Tahini Cookies 


These cookies are so simple and so delicious. I think they are a personal favourite. They are gluten-free, egg-free, refined sugar-free, and vegan. This recipe comes together in 1 bowl, has easy clean up, and only takes 10 minutes in the oven. It's the perfect healthy sweet treat!



Ingredients:

  • 1/2 cup tahini

  • 1 cup oats 

  • 1/3 cup maple syrup or honey

  • 3 tbsp almond flour 

  • 1 tsp vanilla extract 

  • 1/2 tsp cinnamon powder

  • 1/2 tsp salt

  • 1/4 cup chocolate chips (or as many as your heart desires)

Optional ingredient:

  • 2-3 chopped dates 



Instructions:

  1. Preheat oven to 175C or 350F 

  2. In a large bowl, add your wet ingredients - tahini, sweetener of choice (maple syrup/honey), and vanilla extract. Mix these together 

  3. Now add in your dry ingredients - oats, almond flour, cinnamon powder, and salt. Stir until it all comes together. 

  4. Now add in your mix-ins. The chocolate chips and chopped dates. 

  5. Using a spoon, scoop out batter onto a baking sheet or greased pan. Bake for 10-12 minutes. You do not want to over bake these cookies. Just bake until the edges are slightly golden brown. They are nice and chewy once they cool.

  6. Enjoy the cookies with a nice glass of milk or on their own!
