Ingredients

1 cup soft Medjool dates, pitted (about 10–12 dates)

¾ cup mixed nuts (almonds, cashews, walnuts, or a combo)

¼ cup seeds (chia, flax, hemp, or pumpkin seeds)

½ cup rolled oats (optional, for added texture and fiber)

1 tbsp nut butter (optional, helps bind and adds creaminess)

1 tbsp cocoa powder

Instructions
1. Soften the Dates (if needed)
If your dates are a little dry, soak them in warm water for 5–10 minutes. Drain well before using. Soft dates blend much easier.
2. Blend the Base
In a food processor, pulse the nuts and seeds until roughly chopped. Add dates, oats (if using), and cocoa powder. Blend until the mixture starts to clump together.
Tip: If it feels too dry or crumbly, add 1–2 tablespoons of nut butter or a splash of warm water and pulse again.
3. Roll into Balls
Scoop out tablespoons of the mixture and roll into bite-sized balls. Slightly damp hands help prevent sticking.
4. Chill & Store
Place the bites in an airtight container and chill in the fridge for 20 minutes to firm up. Store in the fridge for up to 10 days — or freeze for longer shelf life.
