Homemade Coconut Barfi
If you're craving something simple, sweet, and steeped in tradition, look no further than Coconut Barfi. Ingredients:
- 150g milk powder
- 100g desiccated/shredded coconut
- 1/2 tsp cardamon powder (optional)
- 1 tin of condensed milk (397g)
- Nuts or rose petals for topping (optional)
Instructions:
- Prep the pan: Grease a small square tray or plate with ghee and keep it ready.
- Cook the mixture:In a non-stick pan over low-medium heat, add the coconut, milk powder, and condensed milk. Mix well.
- Add flavour: Stir continuously for 6–8 minutes until the mixture thickens and starts leaving the sides of the pan. Add cardamom powder and mix well.
- Set the barfi: Quickly transfer the mixture into the greased tray. Spread evenly with a spatula and smooth out the surface.
- Garnish and cool: Top with chopped nuts if using. Let it cool for 30 minutes or refrigerate for faster setting.
- Cut and serve: Slice into squares or diamonds and enjoy!
Variations:
- Rose Coconut Barfi: Add a few drops of rose essence and pink food coloring.
- Chocolate Twist: Mix in a tablespoon of cocoa powder for a coconut-chocolate delight.
- Jaggery Version: Swap condensed milk with grated jaggery and cook with a splash of milk for a rustic, healthier twist.
