Shrimp Chipotle Tacos

Smoky chipotle shrimp, creamy slaw, and bright lime all tucked into warm tortillas — these tacos are bold, fresh, and ready in under 30 minutes.

These tacos bring together the perfect mix of flavours:

Ingredients

For the Chipotle Shrimp:

  • 160g jumbo prawns, peeled and deveined (tail off)

  • 1–2 tablespoons olive oil

  • 1 tbsp chipotle past 

  • 1/2 teaspoon garlic powder

  • Juice of 1 lime

  • Salt and pepper, to taste

For the Creamy Slaw:

  • 1 cup shredded cabbage (green or purple, or a mix)

  • 1/4 cup mayonnaise

  • 1 tablespoon lime juice

  • 1 teaspoon honey

  • Salt and pepper, to taste

  • Optional: 1 tablespoon chopped cilantro

For Serving:

  • 8 small corn or flour tortillas

  • Sliced avocado or guacamole

  • Corn 

  • pickled cabbage - add this if you did not make the slaw 

  • Fresh cilantro, chopped

  • Extra lime wedges

  • Crumbled feta cheese

  • Hot sauce (optional, for extra heat)


Instructions

1. Marinate the shrimp:

In a medium bowl, toss the shrimp/prawns with chipotle paste, garlic powder, lime juice, salt, and pepper. Let marinate for 10 minutes while you prep the slaw and toppings.

2. Make the slaw:

In a large bowl, whisk together the mayo, lime juice, honey, salt, and pepper. Add the shredded cabbage and cilantro (if using), and toss to coat. Chill until ready to use.

3. Cook the shrimp:

Heat a skillet over medium-high heat. Add a drizzle of oil if needed. Sauté the shrimp for 2–3 minutes per side, or until pink, opaque, and slightly caramelized. Do not overcook!

4. Warm the tortillas:

Toast the tortillas in a dry skillet, over an open flame, or microwave them wrapped in a damp paper towel for 20–30 seconds until warm and pliable.

5. Assemble the tacos:

Layer creamy slaw in each tortilla, top with chipotle shrimp, sliced avocado, fresh cilantro, a squeeze of lime, and crumbled cheese (if using). Add hot sauce to taste.


Tips & Variations

  • No shrimp? Try this recipe with grilled chicken, tofu, or even mushrooms.

  • Extra creamy? add some sour cream. 

  • Make it a bowl: Serve over rice or greens for a low-carb option.

  • Add fruit: Mango or pineapple salsa adds a fresh, sweet contrast to the smoky heat.
